Did you know that "Bowtie" pasta comes from the Italian word "Farfalle," meaning "Butterflies," and originates in Northern Italy?
I love this recipe! It elevates a basic bowl of bow-tie pasta with chicken, cherry tomatoes, mozzarella cheese, black olives, and a delightful homemade Greek salad dressing. It's a simple, refreshing, and satisfying meal that combines protein, vegetables, and carbohydrates. This pasta salad is also an excellent choice for gatherings or as a side dish.
For a more Greek style, substitute mozzarella cheese for Feta, and consider swapping the chicken for Gyro meat.
You can also add your favorite beef, or even salmon. Don't be afraid of making this Pasta Salad your own. This recipe is so versatile that it works perfectly for meal plans, to take lunch to work or school.

Ingredients:
3 cups of Bowtie pasta
2 chicken breasts
2-3 tbsp of cooking oil
2 fresh mozzarella balls
1 English cucumber
1 cup of cherry tomatoes
1 cup of chopped black olives
1 stem of green onion
1 tsp garlic powder
1 tsp onion powder
1 tsp Italian seasoning
1 tsp of dried oregano
1/4 cup of Olive oil
3 tbsp of red wine vinegar
Salt and pepper
Directions:
1.- Cut chicken breasts into small cubes, add garlic and onion powder, Italian seasoning, salt, and pepper. (For 2 chicken breasts, I use approximately 1/3 tsp)

2.- Bring a skillet to medium-high heat, and add 2-3 tbsp of cooking oil. Sauté the chicken cubes until browned and fully cooked.

3.-Cook the bow-tie pasta following the package instructions until al dente and reserve. Drizzle some olive oil before setting apart so the butterflies don't stick together.

4.- Chop the black olives and cherry tomatoes in halves. Cut the mozzarella balls into small cubes and slice the green onion. Rinse the cucumber, scrape down the sides with a fork and slice it. Cut each slice in quarters.

5.- For the Salad dressing
Combine the olive oil, red wine vinegar, oregano, salt (about 1/8,) and pepper to taste. Whisk them together until emulsified.

6.- Combine the chicken, pasta, cheese, tomatoes, black olives, and green onions in a salad bowl, add dressing, and serve garnished with fresh basil or oregano leaves.
