This amazing recipe for Cast Iron Fish Pie that was inspired by one of my favorite chefs, Jamie Oliver. While I'm not sure if he used a cast iron skillet, I did, and the result was phenomenal. This fish pie is made with flounder fillets, tomatoes, creme Fraiche, and a sofrito made of leeks, onions, and sweet peppers. You will need to have some mashed potatoes and pesto sauce ready before starting. If you do not have a cast iron skillet, any oven-safe skillet will do.
I must confess that I have a love-hate relationship with cast iron skillets; they are not common in Venezuelan kitchens. The only exception I can think of is arepa griddles. I did not like the weight, seasoning process, hand washing, and the amount of time it took for it to heat up. But if you see me now, eight years later in Georgia, cast iron skillets have found a special place in my kitchen, and in my heart.
Did you know that the first cast iron cookware was used thousands of years ago in China? Something that old and still trendy has to be special. So if you haven't got your first cast iron skillet, don't be afraid, go ahead and start the journey. It’ll be wonderful.

Ingredients:
- 6 flounder fillets
- 3 cups of mashed potatoes
- 2 tbsp of pesto sauce
- 3 tbsp of creme fraiche
- 1 leek, finely sliced
- 6 stalks of green onions, finely sliced
- 2 Roma tomatoes, each cut into 8 pieces
- 2 sweet peppers, finely sliced
- 1 cup of parmesan cheese
- 1 tsp of Old Bay seasoning
- 3 tbsp of cooking oil
- Salt and pepper to taste
Directions:
1.- Preheat the oven to 375°F (190°C).

2.- Begin by finely slicing the leek, green onions, and sweet peppers. Cut each Roma tomato into 8 pieces.
3.- Next, heat a cast iron skillet over medium-high heat, then add the cooking oil. Sauté the sliced leeks, green onions, and sweet peppers for about 4 minutes, stirring frequently to ensure even cooking. Afterward, add the tomatoes and continue to sauté for an additional 4 minutes. Once done, set this flavorful mix aside.
4.-Â It's time to prepare the flounder fillets. Season each fillet with the delightful flavors of Old Bay seasoning, salt, and pepper.
5.- Using the same skillet, carefully place 3 flounder fillets on the bottom and arrange the remaining 3 around the edge. Next, generously spread the sautéed vegetable mix on top of the fish, followed by dollops of pesto sauce and Crème Fraîche adding them gradually. Once done, cover everything with generous spoonfuls of mashed potatoes and sprinkle the whole dish with the parmesan cheese.
6.- Place the skillet in the preheated oven and let it cook at 375°F (190°C) for 15 minutes. Then, switch to the broil setting and let it cook for an additional 8 minutes until the top turns a beautiful golden brown.
