This dish is a well-known delicacy in the Sicilian region of Italy, and my version is a step up from my humble beginnings in Venezuela. Despite sardines being considered a cheap food option in my country, they are actually a great source of protein, healthy fats, and valuable nutrients. So, don't let anyone tell you that something is not good enough just because of its reputation. Embrace the beauty of simple things, and turn them into something extraordinary, just like this marvelous and tasty Easy Pasta With Sardines Recipe.

Ingredients:

Pasta (approx.  6 ounces or enough for 3 servings).

2 cans of skinless and boneless Sardines (in olive oil).

1 medium yellow onion.

2 cloves of garlic.

2 medium capri tomatoes.

1 can of tomatoes sauce (15 oz).

1/3 of cooking oil (I use avocado or corn).

1/4 of small cappers.

Parmesan cheese.

Splash of white wine (I use Chardonnay).

Pinch of salt and pepper (approx. 1/6).

1 teaspoon of Italian seasoning.

Directions:

1.- Cook the pasta according to package instructions. It should be al dente. In the meantime, slice the onion, mince the garlic, and cut the tomatoes in quarters.

2.- In a skillet over medium, heat the oil and cook the onion and garlic together (until onion gets translucent, 2-3 minutes).

3.- Add the tomatoes and cook them with the onions and garlic for 3 more minutes.

4.- Add the sardines, everything, including the oil. Add the cappers, tomato sauce, Italian herbs, salt and pepper. Combine everything together and taste for seasoning, add salt or pepper if needed.



5.- Add a splash of white wine and reduce heat to low.

6.- Add pasta and toss. Cook everything together for approx. 2 more minutes, make sure the pasta is swimming in the sauce, yes, swimming!




7.- Top with Parmesan cheese and serve immediately.

I was skeptical at the beginning, but this recipe has become one of my favorites. Sardines are so good 🤤
