Peaches have a rich history, originating in China and making their way to Georgia via Europe in the 1500s. The delicious fruit has been enjoyed by many, including English settlers in Colonial America.

A Cast iron Peach Cobbler, What could embody the essence of Southern dessert more perfectly than this?
I selected a medium-sized cast iron skillet to prepare this delicious peach cobbler, aiming for a deeper result. The key to this dessert is crafting a delightful crust that tenderly envelops the peach slices as they form a crust around them. To achieve that, the skillet has to be very hot for the butter to sizzle. For a sweeter and more flavourful cobbler, always use very ripe peaches; the ones that give when gently squeezed are the best.

Ingredients:
Peaches:
- 3 cups of ripe, soft peaches
- 1/8 tsp of nutmeg
- 1/8 tsp of ginger
- 1/8 tsp of cloves
- 1/2 tsp of cinnamon
- 1 tbsp of light brown sugar
Batter:
- 1 stick of unsalted butter
- 1 cup of all-purpose flour
- 1 cup of granulated sugar
- 3/4 cups of whole milk
- 1/2 tbsp of baking powder
- 1/2 tsp of vanilla extract
- pinch of coarse salt
Directions:
1.- For the peaches:
Cut the peaches in halves lengthwise, then twist the halves apart and remove the pit before slicing them into wedges.
In a bowl, combine the peaches with the nutmeg, ginger, cloves, cinnamon, brown sugar, and set the mixture aside.
2.- For the batter:
Preheat the oven to 350 degrees and bring a cast iron skillet to medium-high heat.
While the skillet is heating up, prepare the batter by mixing the flour, baking powder, granulated sugar, salt, vanilla, and milk. Use a whisk to combine the ingredients thoroughly, ensuring there are no clumps, but be careful not to over-mix.
 Once the batter is ready and the skillet is very hot, carefully add the stick of butter to the pan and let it melt and sizzle. Add the batter and move it around to cover the entire skillet. A crust will form as the batter touches the hot butter and adheres to the pan.
3.- Assembling the cobbler:
Arrange the spiced peaches in a spiral shape on top of the batter, slowly covering the entire surface and including all the juices.
4.-Â Bake at 350 degrees for about 50 minutes, or until the top is golden and the sides are bubbling, with a golden crust formed.
5.- Consider adding a scoop of vanilla ice cream while the dessert is still warm. Alternatively, you can refrigerate it, and the flavors will deepen for the following day. Simply reheat it in the microwave for a few seconds.
