Hey there! I'm Sam, a fifteen-year-old with a passion for creating recipes. My mom is the mastermind behind Sofrito Meets South, but this time, she is letting me share one of my best creations with you.

I love growing fruit trees in our little driveway garden, and it all began two years ago, with the idea to get a cherry tree. (Cherries are one of my favorite fruits in the world). We bought the pot and the tree, which suddenly sprouted a little green thumb inside of me that I never thought I had.

Since then, I've expanded to blackberries, strawberries, peaches, blueberries, and Mayer lemons. Yes, all of them are in pots in the driveway!

Last year, my cherry tree bloomed but didn't yield a harvest due to unpollinated flowers. This year, it bloomed abundantly, and I had a fantastic cherry harvest for the first time.


My immediate thought, (after eating a fair amount of the fruits) was to create this Sam's Epic Cherry Pie Recipe, I hope you enjoy it.




Ingredients for the Pie Crust:


- 2 ½ cups of all-purpose flour


- ½ tablespoon of sugar


- ½ teaspoon of salt


- ½ pound (two sticks) of cold, unsalted butter, diced


- 6 tablespoons of ice-cold water



Directions:


1. Start by combining the all-purpose flour, sugar, and salt in a food processor. Mix the ingredients thoroughly.


2. Add the diced cold butter to the processor and pulse the mixture until it forms coarse, pea-sized pieces. The texture should be dry and powdery.


3. Gradually add the ice-cold water and continue pulsing until clumps of moist dough begin to form. To check if the dough is ready, press small pieces together to see if they stick. If they do, the dough is properly mixed.


4. Transfer the dough to a clean surface, add some flour and knead it until all the ingredients are well combined. Divide the dough into two equal pieces, wrap them in plastic wrap, and chill in the refrigerator for at least two hours.


5. After the chilling period, let the dough sit at room temperature for about an hour to make it easier to roll out. This step is optional but highly recommended.


Before you begin working with the pie crust dough, it is essential to allow it to come to room temperature. This will make it easier to handle and shape.

To start, generously sprinkle some all-purpose flour on a clean, flat surface. Take the dough, which should feel soft and pliable, and place it on the floured area. Using a rolling pin, gently roll out the dough. Be careful not to apply too much force; instead, use light, firm strokes to gradually flatten it. This method will help maintain the dough’s delicate texture while creating an even thickness, perfect for your pie.


For baking any pie using this crust recipe, preheat the oven to 375 degrees Fahrenheit and bake for 55 minutes.



For the Cherry Filling:


- Pit around four pounds of cherries and place them in a bowl.


- Add two cups of sugar, the juice and zest of half a lemon, and half a tablespoon of vanilla extract to the cherries.


- Mix everything and let it chill for at least two hours.

Assembling the Pie:


1. Preheat the oven to 375 degrees Fahrenheit. Roll out each half of the pie dough and use one half for the base of the pie and the other half for the top crust.





2. Roll out one half of the dough and transfer it to a pie dish. Press the dough gently into the pie mold until it completely covers it.




3. Add the cherry filling to the dish. Roll out the other half of the dough and use it to cover the pie in any way you prefer. For example, you can cut the dough into evenly sized strips and weave them at the top, or you can just completely cover the pie with the dough.






4. Make an egg wash whisking one egg and two tablespoons of water or milk. Gently brush it unto the surface of the pie.



5. Once it's done baking, let it rest for a couple of hours before serving.
