Growing up in Venezuela, black beans were a staple in my meals. They are indeed the most beloved legume there, especially in a traditional dish called "Pabellón Criollo." We typically serve black beans warm, slow-cooked for hours until they are tender and simmered in a flavorful sofrito. They are often paired with rice, fried plantains, and shredded beef.
I never thought I would create a salad using black beans, but life has a funny way of surprising us! The inspiration for this Black Bean Salad Recipe came to me while my husband and I were visiting a delightful restaurant in Wisconsin last year. The salad was served as a side dish alongside fried fish and hush puppies, and it was absolutely delicious!
This Black Bean Salad Recipe a deliciously refreshing vegetarian option that’s perfect for a healthy meal. It combines protein-packed black beans with the vibrant goodness of red roasted peppers, red onions, cilantro, and a light, zesty dressing.
What’s great is that it’s super easy to make, thanks to canned black beans! You can serve it as a main dish or as a side, and trust me, your guests will be impressed.
Ingredients:
- 1 can of black beans
(approximately 1 ½ cups)
- ¾ cup of red onions, finely chopped
- ¼ cup of red roasted peppers, chopped into small cubes
(I use red roasted peppers that come in a jar)
- ½ cup of cilantro, finely chopped

For the dressing:
- ¾ cup of extra virgin olive oil
- The juice of 1 medium lime
- Salt and pepper to taste
Directions:
1.- Finely chop the red onion, roasted red peppers, and cilantro. Open the cans of black beans and rinse off the liquids.

2.- In a salad bowl, mix all the ingredients.

3.- For the dressing, combine the olive oil and lime juice in a separate bowl.
4.- Add the dressing to the salad and mix.

5.- Season with salt and pepper to taste (I typically use about ⅛ teaspoon of each).
