Discover the delightful combination of flavors in this Black Bean Salad, a refreshing vegetarian dish tossed with fresh cilantro and a zesty dressing. It's a vibrant addition to any meal, perfect for bringing a burst of color and taste to your table!

Growing up in Venezuela, black beans were a staple in my meals. They are indeed the most beloved legume there, especially in a traditional dish called "Pabellón Criollo." We typically serve black beans warm, slow-cooked for hours until they are tender and simmered in a flavorful sofrito. They are often paired with rice, fried plantains, and shredded beef.

I never thought I would create a salad using black beans, but life has a funny way of surprising us! The inspiration for this Black Bean Salad Recipe came to me while my husband and I were visiting a delightful restaurant in Wisconsin last year. The salad was served as a side dish alongside fried fish and hush puppies, and it was absolutely delicious!

(I use red roasted peppers that come in a jar)

- ½ cup of cilantro, finely chopped
