Ingredients:
Mediterranean Diet Garbanzo Bean Salad
- 1 (15 oz) can of garbanzo beans (chickpeas)
- 1 cup of pitted black Kalamata olives
- 1 cup of cherry tomatoes
- 1 bunch of Italian parsley
- 1/4 cup of red onion
Dressing
- 1 clove of garlic
- 1/4 cup of extra virgin olive oil
- 3 tablespoons of red wine vinegar
- 1/2 teaspoon of dried oregano
- 1/4 teaspoon of salt
- 1/8 teaspoon of pepper
Directions:
1.- Begin by chopping the red onion and Italian parsley into small pieces. Halve the cherry tomatoes, and then open the can of garbanzo beans, draining the liquid.
2.- Finely grate the garlic. Combine it with extra virgin olive oil, red wine vinegar, salt, pepper, and dried oregano. Whisk the mixture vigorously until all the ingredients are thoroughly blended and emulsified into a creamy dressing.
3.- Pour the dressing over the chopped ingredients and mix thoroughly. Taste the salad and adjust the seasoning with additional salt if desired.
