Heartwarming Lentil Soup Recipe

Lentils are one of my favorite legumes


Imagine enjoying a steaming bowl of heartwarming Lentil Soup, brimming with a mix of bright orange carrots, celery, peppers, potatoes, and chorizo. It’s the perfect way to cozy up on a rainy, cold day!


So, why should you whip up a good pot of lentils?


  • They’re super easy to make in a single pot, which means less fuss and easier cleanup!

  • If you want to keep it plant-based, just leave out the chorizo, and you’ve got a tasty vegan or vegetarian meal.

  • Plus, as part of the Mediterranean diet, lentil soup is not only delicious and comforting but also packed with protein, fiber, and essential goodies like folate, iron, potassium, magnesium, and lots of B vitamins.

  • During the Spanish Civil War, Lentils became a hero of the kitchen, saving thousands of families from starvation, including my mother's.


I’m excited to share my mom's special recipe with you


She brought this Lentil Soup Recipe from Spain to Venezuela; it embodies the love and flavors that transcend distance, reminding us that we carry cherished traditions in our hearts no matter where we are.

Even though we now live worlds apart, the love and flavors remain the same!

Ingredients:

1/2 lb of lentils.

2 ml of water.

1 medium green pepper.

4 small sweet peppers.

1 medium yellow onion.

1 big clove of garlic. 

2 medium carrots. 

3 medium golden potatoes.

2 stalks of celery.

1 sprig of green onion.

3 sprigs of parsley.

1 piece of dry-cured chorizo.  Approximately 6 oz.

Bacon or Smoked Pork Chops can be used instead of Chorizo.

1 envelope of Sazon Goya seasoning for stews.

1 Bay leaves.

1/2 tablespoon of ground Coriander seeds. 

1/2 tablespoon of Cumming. 

1/2 tablespoon of salt.

1/2 tablespoons of pepper.

1/4 of your favorite olive oil





Directions

1.- Rinse the lentils under cold water, then transfer them to a pot and bring them to a boil, seasoning generously with salt and pepper. Allow the lentils to bubble away on medium-high heat for approximately 30 minutes, until they become tender and slightly creamy.

In the meantime, peel and dice carrots and potatoes. Then, chop the remaining ingredients, including the chorizo. 



2.- Sofrito Magic comes next: bring the oil to a skillet, and make sure is big enough for all the ingredients. Sauté the onions, garlic, green onions, sweet peppers, celery, parsley, and chorizo over medium heat for about 5-7 minutes.

3.- Add the Sofrito to the boiled lentils. Add the Bay leaves, ground Coriander, Oregano, and Sazon Goya package.

4.- Add the carrots and potatoes next.

5.- Boil medium-high for another 30 minutes, making sure potatoes and carrots are soft.  Adjust the seasoning to your taste.

6.- Serve hot, garnish with cilantro leaves and enjoy!
